Day ten: pancake

Nate’s custom whole-grain pancake recipe:

This recipe is more expensive than a boxed mix, and takes a few minutes longer to make. But the upside? ZERO white flour, so a lower glycemic index, and tons of fiber. (You may be able to find oat flour at a natural grocer, or you can just put oatmeal in a Vita-mix or other powerful blender.) We top with peanut butter, maple syrup, or plain yoghurt. Cheers!

  • 4 eggs

  • 3 cups milk

  • 1 TB maple syrup

  • 1 tsp vanilla or almond extract

  • 3 cups flour

    • 1 cup oat flour

    • 1/2 cup rye flour

    • 1/2 cup cornmeal

      • 1/4 cup almond flour

      • 1/4 cup coconut flour

      • 1/4 cup flax meal

      • 1/4 cup wheat germ

  • 2 TB baking powder

  • 1 tsp salt
